Quick Yellow Cake
2 1/4 cup all purpose flour
1/3 cups sugar
3 teaspoons baking powder
1/2 teaspoon salt
1/2 cup shortening
1cup low-fat milk
1 teaspoon vanilla
2 eggs

Combine dry ingredients in bowl.  Add shortening, milk and vanilla.  Mix at medium-low speed about 1 minute.  Stop, scrape bowl.  Add eggs, mix again (medium-low) approximately 30 seconds.  Stop, scrape bowl.  Mix at medium high speed approximately 1 minute.  Pour batter into greased 8- or 9-inch pans.  Bake at 350 degrees for 30-35 minutes, until a toothpick inserted in the middle comes out clean.  Cool 10 minutes, then remove from pans and cool completely on rack.

**3 tsp = 1 Tbsp
**1/2 cup shortening = one stick of butter/margarine
** soy milk (or rice milk) can be substituted
**I usually make this in a 9" X 13" pan.  Cook time doesn't change that much, just check with a toothpick.
**I tend to double the amount of vanilla...  I do that in most recipes, just because I love vanilla...
